I am on the hook tonight for the main course at friends house.  Am planning to do a couple Pikes peak roasts in the oven.  Shooting for a Prime rib style.  Going to cut cut some slots and poke in some peeled garlic pieces, season it liberally with the house seasoning (salt/pepper/garlic salt) and cover it in a herbed butter.  Then plan to set it on a bed of halved onions and bake it in the oven, I think it is for 15 minutes on 450 or so then reduce to 350 and 15 minutes per pound.  Hopefully will take a few pics during and after.  Wife will handle the sides of smashed taters and a crowd favorite of avacodo/cucumber/tomato/onion salad.  Will see how it works out.

Well prep pics and already learned that butter that is too cold wont whip well and incorporate the soy sauce so we just smeared it on and will go with that.  Pikes peak roasts might not be the best choice but it was what my wife got out of the freezer yesterday so that is what we have.

It is resting now, I was busy cheering for Duke, OK AGAINST KU, and am afraid it may have overcooked will find out soon.

Well turned out pretty good, some more done and some perfect.

Now I know that I cam going to get crap from those foodie purists that want to see only homecooked meals and step by step photos :P, but when you are living out of a hotel you got to share what you can on what you are eating. I took my Betterhalf and Livie into Delaware to have some seafood. Since we wanted to try several things we all shared the meal.

Livie wasn't too impressed with the raw oysters, but would likely eat them again. Didn't take long to polish off a half dozen :D!

Then we split the Chesapeake chicken (chicken topped with lump crab) - very good - My Betterhalf's favorite for today.

Livie and I preferred the rockfish and capers.

I will let you get by with this one but no more. Better get you a hot plate for cooking and an Ice chest for a portable fridge. Will they not let you use the prep room for your continental breakfast in the motel? :) . Yea there you go, be the Evening cook for the night staff,

That would be better than using the microwave in the room especially if I was trying to cook fish . Not sure what housekeeping is thinking now that there are three of us in the same room.

I think after you and the Mrs. eating all those raw oysters you should get a second room,

Three of any of my family there would mean three dozen raw.  I don't want to come off harsh or anything, but who orders chicken in a place that close to the coast?

That oyster shell in the lower left hand corner appears to have potential for a great turkey call.... just sayin, waste not want not?
