         Roasted butternut squash soup,

 Good day for making and eating. Rain and mid forties. Roasted two big squash and scooped out six cups out of the hulls. Other things in there included onions simmered in butter, chicken stock, thyme, pure maple syrup, heavy cream and half an apple. Of course I made one heck of a mess but all was forgiven when the Mrs. took her first spoonful when she got hone from work :)

I Have A Big Ole Butternut Just Waiting For That treatment!

              Been a pretty good week around here. Some Fall shopping and cooking here in BilletHeadVille. This post is going to be picture heavy. Last Wednesday morning I did a small hunt and got three geese for our only early goose season hunt. Good enough to start filling the larder. Then Thursday Afternoon did my first bow hunt for the season and shot a small doe. Just been waiting for cooler weather and her it is.  So this morning Mrs. BilletHead took the crossbow and went to the same stand I had hunted. She lasted a bit over an hour and came back to the house. At home we watched a deer go across the yard and right by her stand :) . Pretty funny. We had decided to braise both front shoulders from my deer. So they were rubbed with olive oil and salted. Preheated the oven to 450 and popped them in for 35 minutes to brown,

thumbnail_1013181107.jpg   Removed the meat and added a bottle of apple wine to pan and scraped up the brown bits. Then added from the garden fresh rosemary chopped, sage chopped and a couple sprigs of thyme,thumbnail_1013181200_HDR.jpg Nestled the meat back in and added chicken stock to half way up the meat,thumbnail_1013181202_HDR.jpg  Back in the oven at 300 degrees covered for three hours. Time to do something different. Need a snack while waiting,

   Sliced the deer heart and did some S&P. Heated up a cast iron skillet with some goose fat and began to sear on both sides,

    Good stuff! Then some foraging for side dishes. First a couple hen of the woods mushrooms,thumbnail_1013181236_HDR.jpg  Then foraged in the garden and picked the salad. Three types of lettuce. thumbnail_1013181448.jpg Getting closer to the main meal the mushrooms were cleaned and sautéed ,thumbnail_1013181503_HDR.jpg  The deer again pulled and oven cranked back up to 425 uncover meat and return to brown again,thumbnail_1013181511_HDR.jpg  This done meat pulled,thumbnail_1013181513_HDR.jpg The pan juice strained and reduced for a sauce. Salad built and everything plated up.thumbnail_1013181543.jpg  As we ate we discussed how good yearling deer are and how we should harvest a couple more. Dinner finished Pat says hey I want to back and hunt this evening. I said got for it I will finish up picking meat off the bones. She gets ready grabs the cross bow and heads out. 4:25. I pick meat and before I can get it into the fridge I see Pat walking back carrying the bow in one hand and arrow in another. What's wrong I ask? Nothing she says I just shot a deer! Are you kidding? Nope 5 minutes after I got there two came by,

Looked like a heart shot when you sent me the photo. Was going to ask if it was messed up for eating.

She's an efficient hunter. Get it dropped and worry sbout the meat later. Tell her congrats from the Follys.

Chicken Enchiladas made with leftover smoked chicken.  Gonna be perfect Chief's game time dinner!

They're really simple and really good. 

Filling:

Can of cream of mushroom soup

Can of chopped green chiles (feeling lazy today - fresh roasted is better I know)

Can of enchilada sauce red today but green is fine too.  A little in the bottom of the pan, a little in the filling mixture, the rest on top.

1/2 C shredded cheddar in

2 tbsp. sour cream

3 cups chicken diced

mix the filling and let it meld for a while.

 

Then start filling and rolling corn tortillas into lovely little future enchilada children.  When the pan won't hold any more, stop and spread the remaining enchilada sauce on top.  Cover with foil and bake @ 300 for a while.  75 minutes sounds good.  When it's about ten minutes from time, sprinkle generous amount of more shredded cheddar with the foil off.

Serve with more sour cream and fresh chopped cilantro.  Side of black beans.  And maybe a beer or two.

Using left overs -> half a baked potato with queso and bacon.

Salmon sounds good for tomorrow night's dinner.  Here is my go to recipe.

 

Grilled Maple-Dijon Salmon

4 (4 oz.) Salmon Fillets or one 16 oz. Fillet (skin on)
1/4 cup maple flavored syrup or pancake syrup
2 TBSP Grey Poupon Dijon Mustard
1 TSP Minced Garlic
1/4 TSP Ground Ginger
1/8 TSP Ground Cayenne Pepper
1 TBSP Olive Oil

Combine syrup, mustard, garlic, ginger, and pepper. Refrigerate several hours to allow flavors to blend.

Brush salmon
 with oil and place on a medium-high heat grill

Grill approximately 4 minutes per side or until salmon flakes easily with a fork. Brush frequently while cooking with the syrup mixture.
