You know how you get the hankering for something and can't get it out of your mind? I really wanted a tenderloin sandwich. A trip to town to buy a loin roast. Pork is actually a good buy. This I trimmed the fat and a bit or silver skin off of it then sliced a couple thick pieces off of. Put them in a zip lock bag and pounded them flat. The Mrs. had a cast iron skillet hot with some oil. Meat dredged in seasoned cracker crumbs. A quick fry until golden brown. Lettuce, tomato and onion. Slather of mayo. I got my fix,

No fish or morels. Did get inspired by RPS' hash. Did a sweet and rusett potato hash. Didn't have sausage, corned beef or bacon. So crisped up some scrapple. Parcooked the potatoes in microwave then into a little oil in skillet. Once crispy, added diced green pepper and onions. Followed a little later by minced garlic and diced white mushrooms. S&P some seasonings and back in with the scrapple crumble. Served with over easy eggs and a little hot sauce.

Sounds good but did it look good? Is the phone camera broke? :) . I like to feast with my eyes too,

Looked good as well. We had to eat quickly and head out for Livie's play. My phones pictures are too large to post directly. so did not have the time to edit and include in the post.

Just finished putting together a meatloaf. First picture is mushrooms, leeks, celery, sweet pepper, and garlic sweating to remove moisture. Second picture is the loaf I put in the refrigerator to chill. To the veg and meat I added an egg, a couple tablespoons of sour cream, and panko. Seasoned salt and lemon pepper  as a rub.

Later today I will put the loaf in the egg to smoke. When it comes out, I will take more pictures.

The loaf is out of the smoker at 165 degrees internal. I coated it with a homemade barbecue sauce and put it in a 160 oven to hold for dinner.

Yes I know just another grilled thick cut ribeye and not something new,

Had some good stuff from the BilletHeadVille area to go with it. Sautéed the rest of the morels with some onions to go with the steak. Yes there is some beef in the pile. The baked potato had some garlic chives from our garden on top of the sour cream. If anyone wants some garlic chives for your garden I sure will gift you some.

Easy going day here today. Will take a walk tomorrow looking for a wild turkey. With the past years poor hatches may be slim pickings,

Sesame noodles with poached shrimp and blanched sugar snaps and carrots. I had a little dipping sauce on the side.

Sometimes you gotta go quick. Two pack of frozen White Castles done in 60 seconds.

It tasted good when I put it in my mouth. 😄

Ness I won't eat fresh White Castle so wouldn't even think about reheating them. You're a better man than I am buddy.
