Wife picked up Mahi filet at the store while I was in MO. I wanted teriyaki glaze but we didn't have any. So I mixed balsamic vinaigrette with plum sauce, soy sauce, couple of dashes of fish sauce, five spice powder, and white sugar. Had the Asian flavor that I wanted. I slathered some sauce on the meat side of the filet and seared it in a hot pan. I flipped the fish skin side down and reduced the heat. Once it was nearing doneness I added more sauce on the filet. Added thin slices of onion and garlic into the pan. Then added a bunch of garden picked cherry tomatoes. Cooked until the tomatoes started bursting. Served the fish with jasmine rice and topped with the cooked onion, tonato, and garlic.

Looks good! RPS hadn't thought of a melon Caprese salad. Did you use a white balsamic vinegar?

We like fish (or chicken breast) and zucchini as a low-carb/low-cal meal too. Eat it about once a week.

In freezer clean out mode this week. Chicken, scallops, pizza on the meal plan for the week.

You bet ya. And EVOO. Notice the small amount of prosciutto. The green is mint and basil. I highly recommend the combination.

This will become a version of Arroz con Pollo. Think paella.

I saw that. Did you crisp the prosciutto?
