Well my wife had a dr. Appt to get stitches removed from foot surgery so we stopped and got some groceries and a garlic butter rotisserie chicken, I love them darn things.  Nuked a couple taters and opened a can of sweet corn.  That was it, didnt rate a photo.LOL

Sunday night I made a pork roulade. I followed an online recipe. The stuffing was a ginger and acorn squash chutney. Chutney had diced ginger and squash,  onion, asian five spice, fresh nutmeg, chopped pecans and walnuts, craisins, cider vinegar, and maple syrup. Cooked until the liquid evaporated leaving a slight glaze on the chutney.  Butterflied a pork loin roast. Used a meat hammer to pound the pork slightly.  Spread the cooled chutney onto the flattened pork. Tied the roll and cooked it for about 2 and a half hours. Served with steamed turnips.

About ten days ago, I bought a free range duck from a local rancher/farmer. On Sunday I took it from the freezer to thaw. Tonight I spatchcocked it and put in to roast. The result was impossible to eat. Way down, next to the bone, the meat was tender and tasty. Anything you could cut off the frame was so tight and firm you could not cut it with a table knife. All of it, carcass and all, went into a slow cooker with aromatic veg. Sometime tomorrow I will pick the meat from the bones and save the stock. I could not eat the duck tonight but I will eat it in the cassoulet I will make.

Obviously, I have not cooked real, leaner duck before. How would you fowlers deal with such a duck?

Wild duck, in my opinion is to be eaten extremely rare. I fry the breast very quickly and season with only salt and pepper. 

There is a huge difference in Wild and domestic too. I wish Marty was still hanging out here. I know he would have some excellent recipes to share!

I made the mistake of showing my wife this forum last night. I had to wait until this morning to get the computer back. There is some great recipes and ideals on cooking here. She is a very excellent cook and very open to trying new things. She was extremely impressed with some of you guys. :goodjob:
