rps Posted March 21, 2020 Posted March 21, 2020 I agree, the ATK recipe is not the best. Good to very good, but we can do better. Instead of common gits, use polenta. Instead of water to cook the grits, use stock. Instead of plain grits, add cheese to the grits. Instead of cooking the shrimp separately, let the heat from the grits cook the shrimp. Instead of gravy over the dish, bathe with a garlic butter pan sauce. Add a shaved parm sprinkle. snagged in outlet 3 1

Gavin Posted March 21, 2020 Posted March 21, 2020 All looks great! Heck, I might even be glad to get peas in 3 months! I don't like peas, don't know why, but I don't. Bechamel sauce is easy...just some butter/flour roux, half & half heated to hard boil, some white pepper and a bit of salt in the half & half . Add some grated cheese noodles and what not if you want some mac/souped up mac. Half a stick of butter and and equal amount of flour should work for the roux with a quart of half & half. Used to make 5 gallons at a time at the Italian place. Mitch f 1
