Shrimp and grits tonight. ATK recipe that’s honestly not my favorite but liked by the party of the second part.

Never cooked them myself but they are top of my list...one day I'll harvest my own in the Gulf at the outlet of the Crystal River.

Could you prepare them like Ceviche? then just sear them for 30 seconds a side?
Same for Shrimp????

We used to catch bay scallops (the little guys) from the intercoastal in NC. Lots of good meals. Never tried the ceviche approach. Should work.

When we have grown snap or snow peas they never made it into a dish. Kids would eat them off of the stalks. Can't complain if they eat a variety of vegetables.

I agree, the ATK recipe is not the best. Good to very good, but we can do better.

Instead of common gits, use polenta.

Instead of water to cook the grits, use stock.

Instead of plain grits, add cheese to the grits.

Instead of cooking the shrimp separately, let the heat from the grits cook the shrimp.

Instead of gravy over the dish, bathe with a garlic butter pan sauce. Add a shaved parm sprinkle.

All looks great! Heck, I might even be glad to get peas in 3 months! I don't like peas, don't know why, but I don't. Bechamel sauce is easy...just some butter/flour roux, half & half heated to hard boil, some white pepper and a bit of salt in the half & half . Add some grated cheese noodles and what not if you want some mac/souped up mac. Half a stick of butter and and equal amount of flour should work for the roux with a quart of half & half. Used to make 5 gallons at a time at the Italian place.

No planned meal tonight. Had some shrimp, grits and cheese hanging around so off I went with shrimp and grits.

Sauce of butter, flour, tomato paste, blacken seasoning and cream. Quick grits with American cheese. Mix it well togedda and...

Tasty, I garr-on-tee!

I whipped this up a while back without a recipe. I think I was eating solo this night. I like this style better.
