ness Posted August 12 Author Posted August 12 Back to my ciders: They've been in the bottle since last November. I opened up a #9 (Safale S04 yeast) last week and it was really good. That was our favorite of the 3 we did, and it has definitely improved! Just finished a #7 (Cotes des Blancs). My, oh my that one has improved as well. If there's anybody out there with any of these limited edition, small batch, handcrafted, super special ciders, I recommend you give one a try! Just started another three gallons, all with Safale S04 yeast. This will be another test with varying sweetening/carbonation levels. BilletHead and dpitt 2 John

Quillback Posted September 17 Posted September 17 Scurvy Dog IPA Saw it at the local Wally World. Impulse buy, liked the pic of the retriever with a duck, and it is brewed in Norfork AR. Tastes good, has that little bit of a snap of an IPA and a hint of citrus. BilletHead, Johnsfolly and ness 3

I’m not a huge bitter hop fan but I do kinda like the citrusy dry hopped stuff. Quillback 1 John
ness Posted October 30 Author Posted October 30 The three gallons I started back in August fermented out very dry at about 0.998. I added some priming sugar for carbonation and bottled it a couple weekends ago. The test bottle (plastic soft drink bottle half filled) was rock hard, indicating it had fermented more and produced the carbonation, so I pasteurized last weekend. I noticed one bottle had a pretty thick sediment so I thought I'd crack that one open and check it out. I guess it got a little more than its fair share of yeast because when I opened it up it was a geyser! Now I was skeered I had a problem, so I opened a couple more. All was well on those two with perfect carbonation. Just where I wanted them acid/tannin/sweetness/flavor-wise, but still pretty young. With my safety glasses on I inspected the remaining bottles and didn't see any others with heavy sediment, so I think I'm good. But...these won't be getting shipped anywhere. I had one of my November 2023 ciders the other night and it was really good. They have all three continued to improve with age, but have kinda plateaued. nomolites, Quillback, BilletHead and 1 other 4 John

I have been known to partake in some Southern Comfort on occassion with many that I no longer talk about though I am likely past the statute of limitations for those😅
