I never brine turkey to smoke it. But when I had a vertical smoker I would put the ham I was smoking at the same time over it so those sweet juices could drip on it all night long.

We are having Thanksgiving on Saturday this year thanks to Capitalism. You know,  supply and demand and whatnot. Gotta find something for the wife, youngest and I to do on Thursday.

The turkey is good but the time with friends is better. Picked up a 23lb bird today. In the garage fridge to thaw. Will brine on Tuesday, spatchcock &  cook Wednesday. Haul to camp reheat &  eat on Saturday. The back, neck, cast off trim bits & offal (other than the liver & kidneys) go in the pot to make the gravy stock.  Also stopped by Companion Bakery. Got a loaf of Sourdough, Five Grain, and Pain Beaucaire to cube and dry for the Sage Dressing.

Why have I been through 55 thanksgivings and this is the first time I've heard the word "spatchcock"?

It's like nothing really changes in the world..... except the words.
