Don’t know if I should admit this but got out the last of the sockeye fillets from 6/2018 trip with Phil L and Brian Ellis to Naknek River. Excellent vacuum sealing kept them in good shape. I smoked fillets and had several recipes for baked fillets with different coatings. Lately I have been making patties. Not a favorite in the past but with fillets not canned they are quite good. Basic recipe fish , egg, bread crumbs. After that you can vary it however you like. Tonight fairly standard mix with some onions and chopped celery. The difference was the sauce , mayo with wasabi. Served with some steamed asparagus

Don’t be disrespecting Grandma Vi’s creamed peas!!

So, growing up there were three kids. My baby brother was a constant source of amusement for my sister and I. He had a unique way of pronouncing things that we still laugh about. Tonight we did ‘meef oaf’.

Ho’made mashed taters. And tucked up in there so they can’t be picked on are Grandma Vi’s creamed peas.

Did she do an outcall to make your potatoes?

Cubed gives you six sides to brown before you create chili or whatever. As all of you know browning is called a maillard reaction and is the flavor element you love on your steaks. If you want precise cubes for aesthetic purposes, semi-freeze your meat, cut equal size slabs, slice each slab in the same width strips, and then cut each strip in the same width pieces. When you brown the cubes, do not crowd you skillet.

@BilletHead Is that good enough?

@ness I like peas unless they are cooked until grey. If I intend to cream them, or spinach, I start the sauce first and add the veg last . Then I serve as soon as everything is hot.

Costco ribeyes tonight....tried a new steak butter sauce with Cilantro (sorry @ness) mixed with butter and finely chopped garlic. Added a great aromatic herb flavor to the butter. Great night with her brothers family who finally came over after feeling better about the Corona virus. Great day! Thank the Lord.

They’ve got it very organized and well managed for the current situation. I just wear my N95 and wash my hands and it’s all good.
