           Really  getting some mileage out of the homemade kimchi. So happy with the way it turned out. Pulled second jar at 10 days ferment. Liked it so much went ahead and pulled third and last one at 12 days. I am finding myself getting into fridge and forking out a bite right out of the jar :).

   So today it was grilled Korean Bulgogi Burgers with Kimchi Mayo. Side of oven fries. Cut fries with a coating of goose fat and a sprinkle of tajin seasoning then cooked on wire a rack over sheet pan so as to not have to turn fries. thumbnail_0123211500.jpgthumbnail_0123211500a.jpg

Polish sausage from a local meat shop cooked slowly in a broth with potatoes. Slather of whole ground mustard for service.

Future son in law got himself an Ooni and he and my baby girl have been working on Neapolitan pizza lately. Headed over today to try things out and I gotta say the results were excellent. Homemade dough and sauce, fresh mozz and basil. 

About 950 degrees on the deck and 90 seconds to cook. Great leaoparding on the crusts and great texture. A slight crispiness and char on the outside, soft and chewy. Just excellent.
