       Bacon blue cheeseburgers.  Cold outside, warm inside. Burgers and curly fries watching the chiefs play is a good day.

Was planning on a venison loin for Xmas eve dinner. We had a late lunch of wings.

Then just had shrimp cocktail for a late snack. Pushed that dinner to tonight. Made venison loin, with a bernaise sauce, carmelized onions, and maitake mushrooms.  Sauted green beans with bacon and smoked hot honey sauce. Prepared risotto on the side.

Was a delicious Christmas meal.

  Looks good John. Love that venison. We think alike in the venison deal. Our Christmas dinner was sous vide backstrap similar to our Thanksgiving meal. Parmesan garlic oven fries and bean greens.

So i have never smoked anything in my life, meat or otherwise.  Better 1/2 bought me a smoker last year for Fathers Day i believe, and never used it.  Since I’m on vaca this week, what better time would i have than to attempt some ribs. So, here they are. 
 

I made my sauce using molasses, ketchup, sea salt, acv “extra”, worcestershire and brown sugar. Rubbed with sea salt and a sweet rub.  I used apple wood for the smoke.   I must say it taste better than I expected.

Next time you fire up the smoker, drop a couple of whole russet potatoes in there. They are great.
