Pushed that dinner to tonight. Made venison loin, with a bernaise sauce, carmelized onions, and maitake mushrooms. Sauted green beans with bacon and smoked hot honey sauce. Prepared risotto on the side. Was a delicious Christmas meal. Merry Christmas everyone! Better 1/2 bought me a smoker last year for Fathers Day i believe, and never used it. Since I’m on vaca this week, what better time would i have than to attempt some ribs. So, here they are. I made my sauce using molasses, ketchup, sea salt, acv “extra”, worcestershire and brown sugar. Rubbed with sea salt and a sweet rub. I used apple wood for the smoke.
