 Three days meals from a four day visit from friends.

 Day one carnitas

 Day four today for the new year crappie!

   Between all these meals was so many snacks and Christmas candy treats. If you ever visit and go home hungry from here it's your fault.

How did you like the Dragon's Milk. Picked some up at my local beer shop and thought is was very good. But I like my beer a little darker and stronger.

           Liked it really well.  I have never tried it. Brad brought it down, left me with another bottle. At 11 percent all I needed was one. Kind or reminded me of a quad.

That time of year..pan seared mallard and duck/goose fat rendering. Hoping to knock down a few more canada's to really up my quantity of fat for the upcoming year. The mallards this year have really not been that fat aside from a few. I did have one big boy who had a 1/4" fat cap on him. Can't wait to eat him.

         About done with my 7-dollar bargain box of butternut squash. Another batch of soup this time roasted. Mrs. BilletHead and I tagged teamed this one. Two more squash to finish up.

Couple of ones from this winter. Smoked wood duck queso and a Brunswick stew with squirrel and duck legs. Both were very, very good.

As a New Year's day tradition, we have pork and sauerkraut. Typically I try to use a pork butt roast. This year I found some pork country ribs. My rub consisted of garlic powder, Asian 5 spice, smoked paprika, and brown sugar. Browned the meat and used chicken stock and pilot grigio wine as braising liquid. Added whole garlic cloves and chunked onions.

Cooked at 325 for almost 2 hours then added sauerkraut to the Dutch oven. Cooked another 30 mins. Served with mashed potatoes.
