Between all these meals was so many snacks and Christmas candy treats. If you ever visit and go home hungry from here it's your fault. Hoping to knock down a few more canada's to really up my quantity of fat for the upcoming year. The mallards this year have really not been that fat aside from a few. I did have one big boy who had a 1/4" fat cap on him. Can't wait to eat him. Both were very, very good. Johnsfolly Posted January 5, 2023 Share Posted January 5, 2023 As a New Year's day tradition, we have pork and sauerkraut. Typically I try to use a pork butt roast. This year I found some pork country ribs. My rub consisted of garlic powder, Asian 5 spice, smoked paprika, and brown sugar. Browned the meat and used chicken stock and pilot grigio wine as braising liquid. Added whole garlic cloves and chunked onions. Cooked at 325 for almost 2 hours then added sauerkraut to the Dutch oven. Cooked another 30 mins. Served with mashed potatoes.
