Pan seared mallard I aged for one week back in late November. Added fresh rosemary to the duck fat and basted the last minute or so. Game changer. Complete with a horseradish cream sauce. If you don't like duck, you've never had 'em cooked like this.

looks delicious. How did you age it? just the breasts in the fridge? did you hang the bird?

Just hung the birds in my refrigerator. You have to make sure the ducks you pick to age aren't shot up in the body. That way the guts aren't causing any issues. Highly recommend aging ducks if you haven't done it before. Changes the texture and flavor quite a bit (in a good way).

Chicken bacon ranch pasta homeade. It was good but heavy. The garlic cheese bread is store bought. Just seen that this thread is over 10 years old.  Wow, we've been here for a long time.

            Another new dish and two thumbs up. Italian Mushroom Soup (Zuppa Di Funghi). Found this in a site I frequent.

   For the dried wild shrooms I was well covered. We used a mix of morels, Chantarelles and Maitake (hen of the woods). Whenever we get a big haul, the extra are dehydrated and this is just what the recipe calls for.  We made it like is listed on the recipe. We had two bowls each and have maybe a big bowl left. I am sure it is for six servings buy hey what can I say? 😁Twas goooood,
