           We came in some luck with a bit of Christmas cash,

   So we purchased a couple thick cut ribeyes. Was not happy with the thickness in the counter so we had them cut. Big enough to split they will make two meals so another good day will happen in a couple months. Hope I can adjust to store bought protein :) . Vac sealed with S&P with some fresh thyme from the garden the steak went into the sous vide bath. Started a charcoal and oak fire it was tossed on to sear. Front , back and sides all the way around. A big salad with onions, pear and blue cheese crumbles beside it. Mrs. BilletHead has been upgrading her plating and some of the new ones showed up today. Up at five AM  this morning for a quick duck hunt for meat for Christmas dinner tomorrow. Butter poached lobster from the sous vide, lobster risotto, sauteed asparagus, and an arugula/radicchio/fennel/blood orange salad with a sesame citrus dressing.

Merry Christmas everyone! I wish you all happiness with each of you and your families.

My fishing trip got unexpectedly extended due to the mate being a no show and one of the regulars taking on thise tasks. All day in the wind and heavy chop took its toll on me. So we tabled out ribeye and shrimp dinner for after Xmas. Will post when we have something ready to post😌.

Merry Christmas to Everyone.  I have a 5.5 lb standing rib roast awaiting it's appointment with the smoker, and was told will have a few extra mouth to feed, so thawing out some venison loin to quick sear as well.  Bread dough rising to make a batch of cinnamon rolls, and 25 lbs or so summer sausage mixed and stuffed last night with my new Cabas stuffer also awaiting a trip to the smoker.  And best presents of all, my son will be here, and my daughter will be bringing my grandson.  Rather have hugs than open any gift.
