My grandmother made scrapple with a hog's head, not offal.  Boiled it in some mysterious delicious spice blend, picked off the meat, made corn meal mush with the liquor from cooking the head, mixed in the meat about 50-50 and put it up in loafs to be sliced and fried.  Delicious.

                 One of those days soup would be good. Mrs. BilletHead dove in and made a big pot of potato soup this morning. Straight up noon I devoured two big bowls worth. Grazed and snacked first part of the football game. Half time it was nachos and a brew :) .  Might do a real meal tomorrow.

Mmm, I have been wanting a big pot of either oyster stew or Jambalaya.  Had a hankering for "tortizzas"  which indulged last night.  Nothing more than a flour tortilla with marinara, cheese, pepperoni, and whatever else you like.  Slide it into a skillet and when it's melted the bottom is crisped up.  Super thin crust pizza I guess.

I have seen Amish souse or headcheese being made with pig's head and feet. Pickled and in a gelatin loaf. Haven't had that in years. Might oick up some when we are back in MD.

So I made chili for my son's reception yesterday. Browned ground beef in asian chili oil and drained off fat. Added minced onions, green and red bell peppers and two cloves of garlic. Added that to meat and cooked until onion was translucent. Added abput a third cup of dark chili powder and ground cumin. Two tablespoons of garlic powder, tablespoon of tumeric and a teaspoon of pepper flakes. Mixed that into the burger. Added a small can of tomato paste and a large can of tomato sauce and for cans of chili flavored kidney beans. Minced cilantro was added then salt and pepper to taste let it simmer for a couple of hours. 

Due to snowmageddon only family ended up at the house. Had the chilli with shredded colby jack cheese and a dollop of sour cream. I added just a touch of Cholula hot sauce.

Had more today between excursions into the snow.

Scrapple and souse are classic examples of using everything but the squeal. I happen to love rillettes. Most recipes I see call for pork shoulder. The first batch I had was based on pork belly. The second batch was duck scraps. I bet the BH's would love it.
