Hey guys! Everyone on vacation? Or is it just too hot to cook?

This evening's Bill of Fare:

Starter: Avocado toast with prosciutto and manchego.

Main: Seared scallops with lemon butter.

Side: Gazpacho with garden garnish

Sweet: Raspberry icecream

I will edit later to add pictures.

Been cooking a little.

Bought some Thai chiles and used them to spice things up a bit in another stir fry on a bachelor night.

Breakfast burritos this morning. Eggs with a bit of cheese, bacon and green chiles. Gotta have those eggs creamy not hard and tough.

An old favorite in the oven right now. Will follow with more.

Meatloaf. Ever heard of it? With the good old ketchup, mustard and brown sugar glaze. Steamed green beans with butter and seasoned with some chicken base. Mashed taters. Wasn’t going to have a gravy so I amped up the butter and cream plus added some sour cream. Very creamy and very delicious.

Spent most of my morning grilling vegetables. Salsa time!

Did some stuffed peppers again, and a roast chicken recently.

Eating a lot of fried bologna bacon and tomato sandwiches

Prob do some BBQ smoked ribs next week  for a party.

Friends everything sounds/looks so delicious! Nicely done

Rick!   Where you been?

This has been the most insanely busy spring and summer for a so called retired guy.

Looks good Ness! That will be dinner tomorrow night;). I used to love meatloaf sandwiches. haven't had one in a while, since I typically eat the leftovers just like the original meal.
