Used to catch lots of redfish when we lived on North Padre Island. As far as eating, I would rank them lower than the other bay species down there. The meat was rather bland and a bit coarse for my taste. Problem was a smaller redfish around 16 to 18" was great eating, but Texas put a minimum size limit of 20" and most that we caught were in the mid 20 inch range.

Now as far as catching them and the fight they put up, I would rank them number one on the list. They were fun to stalk on the shallow flats with a fly rod or small topwater plug.

In Louisiana they had a slot limit and mostly it was Trout and I was surprised with Catfish.

Years ago it cost $75 for everything Fresh and Salt Water Fishing.  6 Deer Tags. Small Game and Bear.

At the time they figure there was 300 Bear in the state and had a season.

My kids hated Catfish and Rice 3X a day.

Like I say it was fun.

BH, and others for that matter, if you plan to travel to Tulsa, message me and I will feed you. Bring me walleye and I will teach you fishburgers.

I gotta admit the idea of a fish burger didn't interest me much.  But I did try them, dang good!!

I went to Gulf Shores earlier this year for my first time. We caught some vermillion snapper, trigger fish and pompano. The vermillion snapper were about like white bass. Pompano and trigger fish were VERY good with trigger fish being my favorite by a small margin.

I grew up eating small drum that we'd catch on the Gasconade and Missouri River. They were delicious!

Sheepshead are at or near the top of the eating list so far as I am concerned.  A little tough to clean but dang are they good.

I’ve never had it but heard it’s excellent.  I’m going to SC this December and it’s not a good season for red fish so I might try to catch some sheepshead in the intercoastal.

Never had pompano but triggerfish are indeed excellent.  Some of those weirdos in Alabama swear by mullet of all things.  To me they are NOT good.
