    What's Cooking?

    Man you all are posting some real good sounding holiday meals. Thanks for sharing everyone, The BilletHead's were alone today. We scored on a couple mallards yesterday. One extra fat. Fattest one so far of the season. We prefer grilling so this was todays plan. Coals getting hot I cross hatched the skin so some of the fat could be rendered out over the hot fire. Getting rid of some of this fat will help get the skin crispy, Then onto the hit grill. Smoke and fire are magic, Mrs. BilletHead was getting the sides ready. Green Beans, Asiago mashed potatoes, Cranberries and dressing. Man I love Mrs. BilletHead's dressing an could eat it with every meal, Again Merry Christmas you all, The BilletHead's
  2. I think they are plenty here in MO Ron. Just very stale. Been struggling. A bird or two here and there. I think 13 in the last eight days. Two of them yesterday morning. Plenty of Canada geese around but not ready to mess with them. That may have to change though, BilletHead

    Quill, One of the easiest things to do. I assist Mrs. BilletHead. She says we should do it more often just not a couple times a year. Very versatile using the leftovers. Nice you are standing watch over the neighborhood and sharing todays meal ! The BilletHeads
  4. I actually thought about going out again this morning. But then again this could be a Christmas present to them giving those critters a break. BilletHead
  5. Dang I have a long ways to go there friend. I had it in my mind six. I for sure wouldn't want to carry ten of those behemoths from the woods! I was half way there . It is amazing on the food we have at our disposal. BilletHead

  7. I did some shooting yesterday with the .22 marauder air rifle. I prefer the .25 but have less premium shots. Many more with the .22 . I want to make a long walk and not have to carry the portable air tank. Today was not that long walk but I found some Fox squirrels to try the .22 on. As a matter of a fact they were going crazy chasing and fighting I shot two doubles out of the same tree. These guys did not stay still at all so there were some shots that missed. All were big nutted boars. This is breeding season and I am betting some female in heat was close. All were head shots but lost one front leg on a pellet exit. There will be a long slow braise in the cooking process. I am thinking squirrel aurora will be one of the dishes. I am so glad I have reconnected and fell back in love with hunting this furry little creature. Good for slowing me down and making me use patience for the small target. Todays take, A quick short hunt with the .25 Saturday morning netted me a couple of grays. One took a tumble into a creek, BilletHead

    We came in some luck with a bit of Christmas cash, So we purchased a couple thick cut ribeyes. Was not happy with the thickness in the counter so we had them cut. Big enough to split they will make two meals so another good day will happen in a couple months. Hope I can adjust to store bought protein . Vac sealed with S&P with some fresh thyme from the garden the steak went into the sous vide bath. Started a charcoal and oak fire it was tossed on to sear. Front , back and sides all the way around. A big salad with onions, pear and blue cheese crumbles beside it. Mrs. BilletHead has been upgrading her plating and some of the new ones showed up today. Up at five AM this morning for a quick duck hunt for meat for Christmas dinner tomorrow. I am in a food coma from the steak trying to keep my eyes open, Merry Christmas to all of my foodie friends on here, BilletHead

  13. Maybe it was suspended near the thermocline? Heck when you fished with me there were many rocks you set the hook into. I remember too we had to go over and release all the rocks. #freethefighter #keepthemwet . I may also add no rocks were hurt during this outing. Also do rocks feel pain? BilletHead

  16. @oneshot, Is it painted or vinyl stick on? I think it should pull a boat that has wrenches pink jerk lizard advertisement on each side. He may even provide the boat to you since you are on his pro staff. BilletHead

  21. Good thread and enjoying all the responses, My first goal consists of fishing more than I did last year. After loosing my long time fishing buddy it took the wind out of my sails some. It was good to get out and fish from his boat last Summer and remember him. Gets better each time I step into his boat. It did not matter which boat I was in I or the Mrs. and I passed places where he and I fished together and I could tell a story of that spot. I did get to take two of Richard's grandsons and his widow on a run to one of his favorite spots last Spring on the kids spring break. They both helped me operate Grandpa's boat. Cold miserable day. The second thing I hope to do is fish with more Ozark Anglers members. I'm putting it out there ladies and gentlemen. We should fish together. We might catch, we might not but fish we will!   25. I don't think any of us would let your starve oneshot. If you were closer I could fix you up. You know if there is a way to make it to the river I know you can catch some of those stinkin bass! Someone needs to get back to fixing that wiring harness on that old junk two stroke stinking motor. Idle hands are letting your brain hallucinate and make up things. BilletHead
