Seasoned and given a few minutes on the Blackstone, wonderful sear and dead rare in the middle. Some fresh pulled turnips and I added some bush baked beans cause I like them. Terrierman Posted December 25, 2021 Posted December 25, 2021 Isn't it amazing what carving a turkey does to moisturize your hands? We did the family thing Thursday. Today I did a turkey in a Butterball oil less fryer which is actually a roaster. Cooks hot, ten minutes per pound. Has a pan for wood chips or pellets. Apple and beech went in today. Turkey injected with creole butter and heavy rubbed with Lawry's. I always use a thermometer, turkey at 165 and left to rest for an hour or so is about as right as I can do. It's no joke good. I took some homemade chicken stock from the freezer and added onions, celery, carrots, mushrooms, peas, orzo pasta plus herbs and spices. Homemade chicken noodle soup. Might get a covid test. The new omicron variant is very mild and getting confused as a cold. My daughter has it and it’s a very mild case. She tested positive twice for covid but we are just assuming it’s omicron. They didn’t test for specific variant. Wife and I have been exposed to her for 5 days now but no symptoms. I know at least a dozen people with it currently all mild cases they assume is omicron. If we get it it my wife and I hope it’s this version because it’s very mild.

Gavin Posted December 26, 2021 Posted December 26, 2021 Did a prime rib last night. Reverse seared it at 250 till it hit 120 (about 3 hrs). Pulled & Rested it on the counter for 45 minutes, then covered with a stick of soft butter and into a 550 degree oven for 15 minutes, pulled at 130 and it was perfect, crusty & rare edge to edge., No need to rest it further, just slice and consume. Poaching gift box of Harry & David pears from the office unwanted pile today. Poached pears, w pecans, & blue cheese to go with leftover beef tonight. ness, snagged in outlet 3, rps and 5 others 8
