I seasoned a small pork sirloin roast with s&p, thyme, and rosemary then slow roasted it at 220 degrees to 140 degrees. It will rest a bit and then go in a 500 degree oven to crisp up and brown the outside.

Meanwhile I browned slab bacon lardons and removed them from the pan before I added Brussels sprouts to pan roast. When they are somewhat charred and down, I will add the bacon bits back and finish them with Worcestershire sauce.

Talk about a low carb meal, right?

    More cooking here today, some for eating today and some for later. Started off cooking a rather large batch of meat for carnitas. Had legs, thighs and wings from four wild turkeys. In the pot they went with bay leaves, crushed juniper berries, cracked black peppercorns,cracked coriander seeds, cumin seeds dried hot peppers and water. Then after a small boil it was a simmer for four plus hours. Before,

  Will let cool and put in fridge for the night. Tomorrow will remove meat from the bone. Did five pounds of goose jerky a couple days ago. Got the slabs cut into strips. Netted maybe two pounds after smoking and drying. This batch was hot flavored. Hot right off the bat on the tongue and then a nice warm finish,

     Mid morning snack of duck prosciutto and blue cheese. Got this blue at hivee. Glacier Penta Creme. Good stuff. The Mrs. Is a bit put off by the slight funk of the prosciutto. I have hope for her though as she used to gag at the taste and sight of blue cheese. Now she thinks she is a critic of that cheese liking it as much as I do :) ,

Okay, Just the vegetable for me!     Pork is great,  Brussell Sprouts are so much better!

Chicken and rice soup.  Four hindquarters, a couple big sprigs ot thyme and same rosemary, medium red onion, maybe 1/4 c chopped Italian parsley and probably twice that of celery tops, some salt and some Cajun seasoning and the bag of spices from a box of Uncle Bens long grain and wild rice are simmering in the stock pot right now.  Will debone the chicken after it cooks for a couple of hours and add the box of rice and some carrots.  Easy peasy.

Supper with friends, son and a couple other young folks.  Suggested home made pizza.  Ours tend not to be as pretty but are packed with stuff.  Frozen crust dough, hard salami, Kalama olives, pepwroni, artichoke hearts, silly amounts of cheese.  One had cheese over top of evwrything, is why it looks brown.  Also had a pasta salad, not low carb but dang good.

Went simple tonight with a baked hormel pork loin with honey mustard marinade. Tried a hyvee mixed grain called black pearl medley with rice, black barley, and daikon radish seeds. Added fresh green beans with garlic powder and S&P.
