I think this is the one I used.  RPS has lots of recipes on that site.  I also used the walleye chowder but substituted white bass and it was fabulous, probably even work with your "Mutt" white bass.

Good smoke ring. Usually separate the point & flat but that looks like a brisket should. Great job!
