I do like calves liver. Lorenzo's on the hill does a great one. Do like hearts, deer heart, beef heart, and if you like dissonance & experimental music you might like some Captain Beefheart.

I'll eat pretty much anything at least once.  To me, proper tongue sandwich is braised skinned and then ground into a mildly spiced very rich spread.

No kidding.  Stop trying to be creative with the sausage meat. Sausage is fine.

There is a little taco joint by my house up here in KC... Best thing on the menu is the beef tongue taco. Some finely minced onions and cilantro, on 2 warm soft corn tortillas... Bombass piece of food... and cheap!

It's pure muscle.  Last I looked, steak was muscle.  You guys remind me of a joke about the guy who asked what the special was at the lunch counter.  Special was tongue sandwich.  Guy says eww I could never eat anything that came out of a cow's mouth.  Give me a couple of eggs.

Nope, the tongue is a muscle.  And as much as I like a good steak, I like tongue better.  It's different because it's cooked differently, but done well it's like the most tender, melt in your mouth beef you'll ever eat.
