I know a guy bought a Hog found he couldn’t find a Butcher Shop to take it.

Had a guy yesterday said he isn’t Deer hunting because he don’t know how to butcher one.

I told my wife what he said. She said the Butcher Shops are on the radio saying they are unable to do Deer this year.

We always did our own.

I think a lot of shops aren't doing them like they used to. There is a butcher shop down the road from where I work and this is the second year in a row they will only take quartered deer to process. I think part of it has to do with the disposal of what's left over. That and they told me they just don't have enough people to handle it.

We’ve always done our own.  We skin and bone them out in the woods then leave the coyotes a feast.  We have a grinder and a slicer for burger and steaks as well as tubes for our own summer sausage.  It isn’t rocket science to process a deer.

Well Local they are saying they won’t because they are months backed up with other stuff.

I know with this Hog the only place said it was going to be 6 months. The rest said they couldn’t do it.
 

Maybe it is just some areas. I never worried about it.

Like I was just telling my wife. I can shoot a Deer my problem is once I shoot one I’m committed. I have to Field Dress it, get it to the Pickup and bring it home and cut it up.

If I have my Bad Hand up above my Knife it is scary because my Hand might drop down on my Knife and have far worse problem.

Very few of the places around here are doing deer this year.  They already have all the work they can possibly do butchering hogs and beef.   They'd have to hire 4-5 guys and build another cooler if they were going to process deer.   

Plus with all the bullshithype about CWD (thanks to the MDC) they will loose their year-round business if a single deer gets brought into the facility.

Back in the spring when the covid meat shortage hit, people began to butcher their own beef and pork.  Meat shops were overwhelmed.  Could not find deep freezers either. Then workers started staying home drawing covid checks and things got farther behind.

I always process my deer. Gonna have to find a new grinder though, mine did not run last night when I started to work one up.  They may be as scarce as freezers now.

I was thinking of CWD . The deal with it is it is in the Spine and Brain. 
 

Most butchers cut Deer just like Beef cutting the Spine if they debone it wouldn’t have this problem.

I debone deer, no need for a saw to process deer.  What I need is someone to cut up the big chunks into grinder size chunks.  For some reason that downward push in cutting up meat and my new shoulder parts do not work together well.  Can easily lift up a 5 gallon jug of diesel to put in tractor but try to push downward to even make chops out of a nice pork loin and my shoulder screams.  Fortunately my wife hasn't pulled the trigger on any deer yet so I haven't had to really give it a workout.

Hell even if you don't know how, there are these little things called the internet, Google and YouTube that shows you how to do darn near anything you can possibly think of......

With as many deer as shoot, we'd go broke paying a processor to take care of each one. It's not hard to do yourself at all. If you're that unsure on how to do it, just learn how to the remove the backstraps and tenderloins and then just chunk the rest off. It may not be pretty, but it won't matter if you just need burger or scraps for sausage. You can take the boned out meat to a processor and they can grind it or turn it in to whatever deer delicacies you desire.

I think the majority of deer hunters want the backstraps to fry/grill, jerky and sausage anyways.
