Maybe but I don’t like the taste.  I just stay with my rosemary lamb.

           Did you cook it done or rare to medium rare?

I’ve had it about every way that you can fix it.  The more I’ve had the less I like it.  Summer sausage is the only way I can eat it and that has to be cut with beef and a lot of liquid smoke.  I’ve gone through lots of jerky recipes and quit all of them.  So I quit hunting them cause I can’t do catch and release like with the fish.

I haven't really figured venison out. Some is very mild and tasty, some is so metallic and gamey that I can't hardly stand it, just cooking it stinks up the house. 

I process all deer the same way, doesn't really make any sense to me. 

I will eat the backstraps by themselves, the butt roasts make good jerky, the rest can go into the grinder as far as I'm concerned.
