I've toured the Lebanon Bologna factory in Lebanon Pa about thirty odd years ago,  memories a little vague, but I recall hanging halves of beef being cured about the way that Grandpa cured hams. Treated with salt and sugar and spices and then smoked for about a week prior to grinding  and forming into the sausages. They said they use the whole beef and no other meat. IIRC they used red oak as the main smoking wood,  but like I said it was a bit ago.

Wrench your are correct that it does look like salami, but that is just looks, taste is somewhat different. 

As I recall the stuff was based on old German recipes, so one could say Amish, but the factory we toured apparently was not part of any religion. It was the cleanest meat factory I've ever seen, nothing like the poultry processing plant where I loaded trucks in '67.
