Gavin Posted January 2, 2022 Share Posted January 2, 2022 I wouldn’t say that STL commercial bbq has a style, and if it does it’s a fusion of Memphis & KC. It’s nothing that I can’t do better in my back yard because they tone the spices down, and meat quality varies so much. Home style STL bbq does have a style. Pork steaks charred, then smothered in vinegar based Maull’s or Open Pit bbq sauce is about as South STL as you can get. Maybe the snoots at Smokie O’s if you want North STL bbq. You have to ask for Moist Brisket. or the burnt ends. And if they do not know what Moist brisket is they do not know BBQ. The place in House Springs is Company B BBQ. Brisket is pretty good. But I have gotten to know the owners there and they have come to know what I expect. They also have a white potato salad that is very good. It's tiny, and was busy the day we were there. To go along with their really good meats, I remember their bacon mac n cheese and smoked cauliflower was amazing. jdmidwest Posted January 5, 2022 Share Posted January 5, 2022 I don't know what you call local in the area you live in, but I have always like Country Hicks in Cuba, good place to feed on BBQ. Have a pretty good brisket and loin. Nice assortment of various sauces. Dexter MO has a place called Dexter BBQ that makes the best pulled pork with slaw. Their sauce is good too. Thick pork steaks and soft serve ice cream for dessert. They have several other locations in the area in SE Mo., but the Dexter one is the best. Bailee Jo's in the Ironton/Arcadia area has good dry rubbed pork selection, beef brisket, chicken, and a nice assortment of his own sauces. Has some cajun dishes there also. Best ribs made the way I like them come from a Wink's C Store in Gordonville Mo. I will pick a slab up if they have them when I pass thru. And a bag of their homemade potato chips.
