I had the butcher shop I use, order me in last week, a Lengua/Beef Tongue, some people call it A- Licker. Cooked it in the pressure cooker yesterday, for 50 minutes with a bay leaf, red pepper, and some other spices. Let it cool naturally, Peeled the skin off. Sliced it up and made Brown Gravy w/mushrooms in it. Mashed potatoes. and fresh cooked zucchini squash w/tomatoes, onions. garlic, salt and pepper in the skillet.
Boy oh boy was it ever good. 
Now I just finished off a sandwich of tongue and it was even better than last nights dinner. 
I would eat this any day of the week over roast beef for sure.   
If you ever had it you know what I am talking about and if you have not, you really do not know what you are missing out on.

I’ve had a lot over the years.  Thanks but I have to pass.  Now mountain oysters with some cold brew is a whole different conversation.

Had that many times in my travels to the Basque region of Spain and also when I worked in Angola and the catering contractors were from Portugal.

Very tasty... good stuff.

Really like the flavor of beef tongue. Is a lot of effort but it is worth it. We don't see it that often. May have to ask at the counter if they have one or two that they don't put under the glass fro t.

Now that is just nasty.  I have a pact with the world.  Nothing has eaten my testicle in the man many times I have fallen asleep.in the woods and I ain't gonna eat any thing else's.  I have tried them and the cd beer was far away the best part.

I like to give tongue a quick smoke for flavor and slice thin for sammiches.  Ain't my favorite but ain't bad.  Course I also like marinated grilled heart.

I wouldn't turn much of anything down if someone else was eating/serving it.  But I wouldn't just go out an buy/make just anything.   

Money is just ink and paper, worthless until it switches hands, and worthless again until the next transaction. (me)

Good stuff, I get it from the  fine folks at my fav Mexican place, You know it’s the real deal if that is offered.

It is not just a mexican dish. Most Europeans/Farmers have eaten it since almost before time. I am of German Heritage and ate it quite often when and after growing up. A lot of sausages, blood sausage, tongue sausage, Head Cheese, etc have tongue and head meat in it.
