OK, I'm in on this one.  I'm a long time lurker and retired Marine AKA Devil Dog.  I keep in touch with other Marines and I need details on this recipe.

Bluewater. Welcome! Our little group has kept a thread going for more than five years. Over that time we have learned to plate and photograph really good food.

Everything posted here is good eats. Feel free to go back to the beginning and find the best cookbook you can imagine.

I second what RPS said. I might add some of us get really creative with our choice of proteins. Hold on tight this culinary adventure is a fun ride.

This will be a two for post, yep two meals for today. Breakfast and dinner.  Breakfast was beaver backstraps, yes you heard right beaver. The procurement of the beaver will come in another post on the forum. When I cut out the backstrap and trimmed them up it was very nice meat looing like beef. No smell and not greasy of fatty at all.thumbnail_1216201050.jpg

So the idea was to season flour and fry then use the drippings used for gravy.

A bit of goose fat to fry in,thumbnail_1219200703_HDR.jpg Meat pulled and Pat put in some of the seasoned flour as I began to whisk, then some milk and more whisking as it thickened up.. While I was doing my part she did a couple over easy eggs for each for us. thumbnail_1219200715_HDR.jpgthumbnail_1219200718_HDR.jpg

And what did we think of this? In the famous words of @ness "Dang". If I get another you bet if it is a younger one backstraps will be taken. This is another good source of meat. I thank again for the outdoors providing this.

Wanted an easy meal for this evening. So it will be ground venison and red pepper soup. After prepping ingredients this will be done in 30 minutes. Quick and tasty! Healthy as a bonus. Besides the low fat venison there is olive oil, roasted red peppers, kale, onions, garlic, orzo pasta, paprika and rosemary.  Prepared in a vintage Griswold 8 dutch oven and skillet bread on a 9 Griswold  round griddle.

Dang again. Good day and good eats,thumbnail_1219201547_HDR.jpgthumbnail_1219201551.jpg.

Got to love a good short rib braise, unctuous, tender, and flavorful :D
