Still batching it but I did upgrade last night to steak.  Truck farm selling packaged steaks on way home from work.  Hmm big thick T Bones on sale, choice made.  A little extra fat on them but I will be honest and say that beef fat crisped up is about my favorite part.

  We made egg rolls and after that was done, we proceeded to get stuff ready for general tao wild turkey.

    The egg rolls were kept crispy in the oven. Finished up the general tao and put all together.

Polenta with Italian chicken sausage and peppers and onions and an avocado with a white balsamic tomato coulis.

@Quillback shared the world squirrel cook off that is in Bentonville Arkansas each year. Big deal down there including a big hunt. This is the 2019 recipe first place winner from that year. I tackled it today and had dinner ready when Pat got home from work. Really good tacos. The only thing that needs to be different. Either less goodies in the small tacos or use the bigger ones.😁. As you can tell its squirrel season in BilletHeadVille. Opening was last Saturday. I shot five starting Monday for this recipe. A gastrique is a sweet and sour combination - something like sweet and sour chicken. Saffron is the world's most expensive spice, the hand picked stamen of daffodils. Amazon current price for .98 ounce is $129.95. The Middle East, Spain, and the Indian subcontinent use it.

I appreciate chicken fried steak and squirrel and dumplings, but I love experimenting. If I had to choose a food area for the rest of my life it would be the Mediterranean.

Roast Mediterranean spiced chicken thighs with potatoes, asparagus, olives, onions, capers, two kinds of peppers and lemon. You will not believe how good this was.

Couple of whole fried gill and redear dinners from the last couple of weeks. I think those two, along with flathead, are the best tasting fish in Missouri.

Had fried onions/taters and a roadkill squirrel we fried and finished in the oven, with pan gravy, on this dish.
