Last night—4 people, 4 large (1-1/2 to 2-inch) nicely marbled strips and a potato, cheese and onion casserole, with corn on the cob too.

Looks like a great recipe. Spatchcocked chicken and turkey is a great way to cook the entire bird quickly and to the same level of doneness (i.e., don't dry out the breast meat while cooking the thighs). I have been doing thanksgiving turkey like that ever since reading @rps post somewhere around page 350 or 400 in this thread.

Bring me a big bag of wings I will toss them.in a tereyaki sauce and smoke them for about 3 hrs.  Toss them in a mild buffalo wing sauce and eat, get a couple layers of flavor without the falling off the bone texture.

Chicken breast's are tasteless and easy to overcook.  I love wangs though!!

I get two small bites of good meat from a thigh, the rest is that weird colored meat between bones, and slimey fat. Disgusting.   

We do chicken breast kabobs with green pepper/onion/mushrooms/pineapple, or baked breasts seasoned in either lemon pepper/butter or garlic/butter, or a yummy chicken stir-fry.   My wife does hot-wings that are out of this world (some recipe she got from a restaurant in Omaha years ago).    

I'm usually mildly disappointed in fried chicken unless it's KFC on a really good night.  Nobody in my family ever did master fried chicken, not even my Mamaw, but when it's done right it's amazing.  Had fried chicken in a dirty little diner in Mississippi once that was so unbelievably delicious that it spoiled me. Thirty-some years ago and I still long for the flavor of that chicken they served there.  I don't even remember what town it was but we ordered a box of it to go after eating lunch there and lived on it for 2 days.  So freakin' good you didn't even wanna throw the bones away.

She does the 400° oven bake before serving.  That way they aren't all slimey and messy.
