The boneless shoulder was around 5 pounds.

I did not sear the cooked shoulder. I steaked it and covered it with the potato kraut mix. If I were to sear, I would do it before I rubbed it with 5 spice and then seal it for the sous vide.

The steaks were seasoned with salt and pepper then cooked in a trace of olive oil. Once they were flipped, drizzled with teriyaki glaze and flipped again to caramelize the glaze on both sides of the fish. Steamed broccoli drizzled with balsamic vinaigrette and homestyle new potatoes. Not shown was a leaf lettuce salad with cashews, black olives, artichoke hearts, and raw broccoli.

         Man I should of had you bring a steak back buddy. I would of traded for walleye. That is with the permission of Livie since it was her fish. Looks good,

I saw a Hank Shaw shark recipe that I'm going to make with the filets we have. Would still have three steaks left. Livie may have made the trade if we knew before we left MD.
