I feel your pain. I finally bought the smallest egg knockoff made by Kamado Joe.

They can call them Joe the plumber if they want, but the way they are made keeps fiery flare ups from happening.  Maybe I am over thinking the whole thing, before I even knew about pellet grills I would have been happy with a new one just like I had.

We had leftover crab imperial form the Superbowl and fresh asparagus. So naturally it was time to dig out the Omaha Steaks Xmas presents. Thawed a couple of the filets. Nothing special just Montreal seasoning and garlic powder. A couple of minutes on each side in the grill pan (my 20 yr anniversary gift from work). Also heated up a couple of twice baked potatoes from the gift pack as well. served with bernaise sauce drizzle.

Got the Omaha Steaks filets and twice-baked potatoes for Christmas too from my baby brother. Potatoes were pretty darn good. Plus, I still have a couple rib eyes, a couple chops, more taters a few apple fritters from them too. And, then there's the two big ol' Lou Malnati's deep-dish pizzas from my big sister. 

It's like people think I like to eat or something. :D

Had some chicken thighs in the small cast iron skillet for supper with microwaved baked potatoes and gravy.  BUT after supper is when the magic started, had about 21 lbs of ground venison thawed and waiting, mixed in 3 lbs of plain pork sausage and a LEM seasonings packet of Andouille Summer Sausage seasoning.  Mixed, stuffed, and ready for a nap in the fridge before it gets warmed up for 8 hrs or so in the smoker tomorrow.

                   First of all you all and your avocados was a hit here. I had had some in the past with a neutral feeling. Well last week we got a couple and tried them just on a plate with salt and pepper. Not too shabby! Again this morning on Rye toast. Pat put some tajun  seasoning on hers and I some sea salt and fresh ground pepper out of our mill. I am now a fan so well done fellows,thumbnail_0209191231.jpg    Second thing. Just a few days ago I posted of making key lime crinkle cookies but no key limes in season or available we subbed Persian limes. It was very good but still wanted to try key lime. Well I guess season hit because our local Walmart had them. thumbnail_0207191123.jpg   So like we really need them another batch was made with key limes. Our novice pallets could not tell any difference so use what you want. Another good batch for snacking. They really go good with a hot cup of coffee, thumbnail_0207191252.jpg   And finally third thing in this post. Last week our friend Brad came down to hunt geese with me. He thinks he needs to bring food. Good grief no man I say but this time three large steaks. We had them one evening , Brad seared them in a screaming hot cast iron skillet outside. Steaks done just right and he polished his off and the Mrs. and I ate half our ours giving us leftovers. I thinly sliced the steak and did a quick heat up in a skillet smeared with a bit of goose fat. Piled on rye bread with some sharp cheddar cheese.                      Another thing to share from today,

  Grilled walleye po' boy sandwich. Wanted grilled instead of fried fish for this sammich. I olive oiled a couple pairs of walleye fillets then dusted them with creole seasoning. Put in grilling basket as Pat made tangy coleslaw and remoulade sauce.thumbnail_0209191440_HDR.jpg The hoagie buns were toasted and po' boy assembled. We looked at tomatoes at the market but pale and I am sure tasteless so tomatoes would not be disgracing this sandwich. thumbnail_0209191458_HDR.jpg  A few chips on the side and it was game on,

We made a Cassville Walmart run this morning. I had an eye appointment and wound up ordering new glasses. Lightweight bifocals will set you back.

When we came home I began casserolling. Almost out of the oven is a chicken spaghetti. Ready to go in next is a chicken enchilada casserole. Between the two we will have school lunches for the week, plus a few extras that I share with those who need them.

Meanwhile I have a pork chop popsicle in the sous vide. It will share the plate tonight with an asparagus mushroom risotto.
