Well, dinner turned out ok.

Roasted pork loin, roasted potatoes, sauteed zucchini and tomatoes, and a curried apricot sauce.

Sous vide at 137, then 10 minutes in a 500 degree oven to sear the crust.

                That's about what I did when we did ours but seared in a cast iron skillet,

I was 100% with ya, until the curried apricots.    Looks good though.

I respect that. I briefly considered a horseradish cream sauce, but that goes better with beef. I also toyed with the idea of a sweet and sour mustard. In the end, I fixed something I knew the wife would like.

Yesterday made a quick soft scramble with Folly Farm fresh eggs with a little Old bay, red pepper flakes, and garlic powder. Added shredded smoked cheddar cheese courtesy of @WoundedOne :D.

Last night was we needed to use some leftovers. Had pork loin roast leftovers. I sliced the roast into 1/4" slices and sliced an onion. Those got sauted in a cast iron pan until the meat was browned. Added a pork brown gravy and into the oven. Made mashed potatoes and steamed some sugar snap peas. Served the meat and gravy over the potatoes. Salt and pepper to taste :).

We need to replace our grill, and now the bride has decided that we need a Pit Boss.   I'm a simple charcoal guy but it looks like I've lost this fight.

Anybody here giving crash courses on these things.  She's making me go buy one tonight.
