I am not ashamed to admit that a sammich of rotisserie chicken and avacado sounds pretty good!

Avacado makes most things better. Found some year old carnitas vac packed in the freezer the other day. Still good on a tortilla, with some red onion pickeled in salt & lime, tomato slices, avacado, grated queso, and salsa. Last night was a cheap rolled pork butt roast that I covered with Shawarma seasoning last Sunday, wrapped it, then tossed in the fridge. Cooked it to 155-160. Will do again! Great flavor and a great change of pace.

Friday night is pizza night!

Tonight we made a white pizza. Garlic alfredo sauce with spinach, artichoke, roasted red pepper, prosciutto, and a bit of cheese.

Simple and flavorful. Diced chicken legs browned and cooked in jar of store tikka masala sauce. Served over coconut rice with steamed then seared baby bok choy.
