No, not rust.  Just weird angle and Probably not cleaned right.  The one with the sausage is a much newer purchase.   I haven't gone all in, but do like to use the cast iron.  There are many ways to poach them, some use only water stirred in a whirlpool type of way, and caught wirhna strainer.   

@ness, I just cooked (steamed)  them in the nonstick coated cups, and dumped them out.   They needed a little motivation with a silicone spatula.

I am old school on the poached eggs, have done a zillion of them as someone described earlier, a little water, cover and steam, plop the on top of a pancake and breakfast is served.  Of. Ourselves sides of sausage, gravy, bacon, ham, toast, hash browns, jelly etc are all optional as well.

Day 1:

Bones and veggies into the oven at 450 degrees for 45 minutes. Then, into the stock pot to simmer for about 10 hours.

Remove the solids and put the stock into the fridge overnight.

Day 2:

Remove the solid fat. Give it a shake. How about all that collagen!

Make shoop, eat.

A guy that I used to work with at a local manufacturing company told me that he used to work at PF Changs as a cook. He said they made their biggest profit on lettuce wraps because the meat they used was a combination left over of many types of meat.
